Caramelised Onion Tart with Organic Olives and Honey
A savoury tart with caramelised onions, organic olives, feta, thyme and a finishing drizzle of honey.
Ingredients
For the pastry
- 1 sheet ready-made puff pastry or shortcrust pastry
For the filling
- 4 large onions, thinly sliced
- 2 tablespoons olive oil and 1 tablespoon butter
- 1 tablespoon brown sugar
- 2 tablespoons balsamic vinegar
- 1 cup organic green and Kalamata olives, pitted
- 150 g feta, cut into small pieces
- 2 tablespoons thyme honey
- 1 sprig fresh thyme
- Salt and freshly ground pepper
Preparation
Line a 24–26 cm tart tin with the pastry, prick the base with a fork and pre-bake in a fan oven at 180°C for about 10 minutes, until lightly golden.
Heat the olive oil and butter in a deep frying pan over medium heat. Add the onions and cook for about 30 minutes until soft and caramelised. Add the sugar and balsamic vinegar and cook for a further 5 minutes. Leave to cool.
Spread the caramelised onions evenly over the pastry base. Top with the olives, feta and fresh thyme leaves. Bake in a fan oven at 180°C for about 20 minutes, until the cheese has softened and the topping is golden. Remove from the oven and drizzle with honey while still hot.
